Obituary of Katherine C. Schaefer

Katherine C. Schaefer “Kaycee”, age 18 of Flemington, NJ, died Wednesday, December 30, 2015 after suffering from an allergic reaction that led to a severe asthma attack. Born in Flemington, NJ, she was the daughter of Christopher and Kristine Schaefer. Kaycee, was a senior at Hunterdon Central Regional High School, and was part of the Polly Tech Animal Science program. She was an energetic, fun-loving girl who was deeply passionate about art and caring for animals. She was serving an internship at Paw Prints Veterinary Hospital in Ringoes where she worked as a veterinary technician. She also volunteered at Tabby’s Place in Ringoes. She was an important member of the National Art Honor Society at Hunterdon Central and received many accolades due to her creative talents. Aside from her artistic abilities, Kaycee worked side-by-side with her family on her beloved Schaefer Farms in Readington, NJ. On the farm, she nurtured many of the animals, always lent a helping hand to people in the farm stand, and enjoyed being one of the makeup artist and actors for the annual Schaefer Farm’s Fright fest. Kaycee will be remembered for the lives that she touched throughout her 18 years. She was a loving daughter to her parents, Chris and Kristy, and an excellent sister to her siblings Andrew, Timmy, Morgan and Trey. She was also the loving granddaughter of Christopher Schaefer and Lorraine and Richard Shebchuk and dear niece of William Schaefer, Michael Shebchuk, Kristina Shebchuk, Karen DiNapoli and Danny DiNapoli. Kaycee was a great friend to the students at Hunterdon Central and many other people she met through her daily encounters. Most importantly, she was an amazing girl with a heart of gold and will certainly carry on in the memories of her family and friends. Friends may gather with the family on Tuesday, January 5, 2016 from 5:00 to 8:00 PM at the Kearns Funeral Home, 103 Old Highway 28, Whitehouse. A funeral service will be held on Wednesday, at 10:00 AM at the Readington Reformed Church, 124 Readington Road, Readington.
